Turkey Sausage and Poblano Chili

2  pound  sweet Italian turkey sausage link remove from casings 
3    poblano peppers seeded and chopped 
11/2  Cups  red bell pepper seeded and diced 
11/2  Cups  onion chopped 
1  Cup  scallions chopped 
1  Tablespoon  garlic minced 
21/2  Tablespoons  chili powder or to taste 
21/2  Tablespoons  ground cumin  
2  Cups  chicken stock or more if needed 
3/4  Cup  cilantro chopped 
28  ounce can  whole tomatoes San Marzano preferred 
15  ounce can  pinto beans drained and rinsed 
15  ounce can  black beans drained and rinsed 
  sprig  cilantro for garnish 
    sour cream for garnish 
    sliced radishes for garnish 

In a large pot, brown the sausage meat for about 5 minutes, stirring occasionally. Mix the chopped poblanos, red pepper, onion and scallions into the meat and continue to cook until the veggies start to soften.

Add the garlic, chili powder and cumin, stir and cook until fragrant, about 1 minute.

Str in the 2 cups chicken stock and cilantro and simmer about 5 minutes.

Add the tomatoes, witht he juices and stir to break up the tomatoes. Add the beans, stirring to mix in.

Bring to boil, reduce the heat and simmer for about 20 minutes.

Taste for seasoning, and add "Edge" or salt & pepper to taste.

Serve with cilantro, sliced radishes and sour cream for garnish.


NOTES : Use either blended chili powder, or a pure ground chile, such as ancho powder.

Chicken sausage can also be used in this recipe.
