Pretzels
Quantity Unit Ingredient
1 teaspoon Dry active yeast
1 teaspoon Sea salt
3 Tablespoons Brown sugar
1 Cup Warm water About 100°F
2½ - 3 Cups All purpose flour
1 teaspoon Olive oil
1 Quart Very hot water Not boiling
4 Tablespoons Baking soda


Procedure:
Mix first 3 ingredients in a medium stainless steel bowl – add water and stir. Allow yeast to set for around 3-4 minutes.

Slowly fold in flour, 1 cup at a time, mixing with your hand, until a soft dough forms and the bowl gets cleaned by the dough. Add 1 tsp olive oil rubbed around the inside of the bowl, flip the dough over, cover with plastic and allow to rise (overnight in the fridge is ideal, but at least an hour).

Remove dough from the bowl and cut into 8 uniform pieces. Shape the dough using techniques in the episode or you can get creative with your own ideas.

Mix very hot water and baking soda and add pre-shaped pretzels to this bath and allow to sit in water for at least 30 seconds, getting the water all over the surfaces.Remove from water, brush with 3 tsp melted butter (microwave) and sprinkle with coarse ground salt. Bake in a 450º F oven for 12 – 15 minutes on the top rack.
