Homade Pizza

Yield Information
Enough dough for a 16" pizza

Pizza Dough
Quantity Unit Ingredient
2⅛ Cups All purpose flour High gluten if possible
½ teaspoon Granulated sugar
8 Ounces Warm water About 100 degrees
1 teaspoon Dry active yeast
1 teaspoon Kosher salt

Procedure:

Mix all ingredients in order in a stainless steel or glass bowl adding pinches more of flour as needed to form a soft dough ball. Knead the dough by folding and pressing the dough into itself, ending with the dough shaped like a ball. Allow to proof, or rise, in the bowl covered with plastic wrap on the counter for at least one hour – two is ideal.

Pizza Sauce
Quantity Unit Ingredient
24 Ounces San Marzano tomatoes With juice
1 teaspoon Crushed red pepper or 1 Dry chili pepper
Cup Fresh basil Chopped; cut in half if dry
1 teaspoon Fresh oregano cut in half if dry
½ teaspoon Garlic Minced
teaspoon Kosher salt
½ teaspoon Granulated sugar
½ teaspoon Black pepper Coarse ground
1 teaspoon Extra virgin olive oil

Procedure:

Pulse all ingredients in a food processor and taste…adjust seasonings as needed.

Cheese Blend   (Need about 1½ Cups of cheese per pizza)
Quantity Unit Ingredient
3 Parts Mozzarella cheese Shredded
1 Part Fontina cheese Shredded
1 Part Asiago cheese Shredded

Pizza Assembly:

Sprinkle a pinch of corn meal on a pizza stone or pre-greased cookie sheet
Stretch dough to fit and lay onto pan
Top with approx. 1 cup of homemade pizza sauce
Top with approx. 1 ½ cups of shredded cheese
Load with toppings, like artichokes, olives, goat cheese, and pepperoni
Bake at 400 degrees for about 15 minutes.
