Render down chopped bacon.
Add celery, onion, and garlic. Sauté in bacon fat until veggies start to get soft.
Remove the sautéed vegetables and bacon, leaving fat in the pan. Add butter and flour, and cook into a roux.
Add minced clams with juice, and bottle of clam juice. Bring back up to simmer and add white wine (optional). Add vegetables and bacon back. Add thyme, potato, black pepper and cream. Bring back to simmer and serve.
