6 Roma Tomatoes cut in half and sliced into half-moons
2 Medium Red Onions Julienne cut
3 Cucumbers Halved and sliced
Cup Sherry Vinegar
1 Cup Olive Oil
½ teaspoon The Edge

Tomato Salad Procedure

Mix vegetables in a medium bowl. Mix remaining ingredients in bowl and gently toss. Let marinate for about 20 minutes.

 

Chimichurri Marinated Beef

½ Cup Fresh Cilantro
½ Cup Fresh Parsley
¼ Cup Lemon Juice
3 Cloves Garlic
1 teaspoon The Edge
½ Cup Banana Peppers with brine, separated
2 Pounds Sirloin Thinly sliced

Chimichurri Beef Marinade Procedure

Pulse dry ingredients in blender and slowly add lemon juice and pepper brine until a paste forms. Marinate beef for ½ to 1 hours before cooking. Makes enough marinade for about 2 pounds of beef.

Sun-Dried Tomato & Chipolte Mayonnaise Spread

½ Small Can Chipotle Peppers in adobo
½ Cup Balsamic Vinegar
1 Cup Sun-Dried Tomatoes
3 Cups Mayonnaise

Sun Dried Tomato-Chipolte Mayonnaise Spread Procedure

Mix first three ingredients in a food processor until well pureed. Fold in mayonnaise. Yields: 5 Cups.

Assembling Wrap

Spread mayonnaise on 12 inch flour tortilla, add about 3 oz of steamed white rice, 2 oz of tomato salad, and 4 oz chimichurri beef.  Roll and split in half.
