Salsa Ingredients

Cups Roma Tomatoes Diced
½ Cup White Onions Diced
½ Cup Bell Pepper Any Color; Diced
2 Tablespoons Scallions Sliced on a Bias
½ teaspoon Scotch Bonnet Pepper or Other Hot Pepper; Diced
½ teaspoon Jalapeno Pepper Diced
½ teaspoon Garlic Minced
½ Cup Fresh Cilantro Minced
¼ Cup Lemon Juice About 1/2 Lemon
1 teaspoon The Edge

Salsa Procedure:

Mix everything in a medium bowl – reserve for service

Guacamole Ingredients

2 Ripe Avocadoes Seeded, Skinned, & Mashed
1 Tablespoon Lemon Juice
½ teaspoon Garlic Minced
1 teaspoon Cumin
1 teaspoon White Onion Minced
1 teaspoon Scallion Minced
1 Tablespoon Fresh Cilantro Minced
½ teaspoon The Edge

Guacamole Procedure:

Mash avocado in a medium bowl. Add other ingredients in order. Reserve for service

Potato Ingredients

1 Cup Yukon gold potatoes ¼” diced, skin on
1 Cup Sweet potatoes ¼” diced, peeled
2 Tablespoons Butter
1 teaspoon Onion Minced
1 teaspoon Green onion Minced
1 teaspoon The Edge

Potato Procedure:

Melt butter over medium high heat in a medium skillet (DON’T BURN) saute the onions and brown the potatoes –turn down to low-medium heat and cook slow, being careful NOT to overcrowd the pan (10 minutes)

Burrito Ingredients

Procedure, Per Burrito

Melt butter in a medium skillet over medium-high heat. Saute onions, peppers, and other vegetables and beans for a few minutes and add beans and breakfast meats. Pour in scrambled eggs and scramble the heck out of this in the pan.

Assemble this way: tortilla, refried bean spread on bottom, cheeses, hot sauteed egg mix and roll like a burrito (demonstration on episode). Serve with Homemade Salsa, Guacamole and Sour Cream (not Listed) on the side.
