Black Bean and Chorizo Side

Quantity Unit Ingredient
¾ Cup Extra Virgin Olive Oil
1 teaspoon Garlic Minced
1 teaspoon Dried Basil or 2 tsp Fresh
3 Cups Black Beans Cooked and Drained
1 Cup Red Onion Diced
½ teaspoon Chipotle Powder
teaspoon Ground Cumin
1 teaspoon Sazon Spice
8 Ounces Chorizo Sausage ½" Dice
½ Cup Banana Peppers
1 Tablespoon Fresh Cilantro Chopped
1 Cup Chicken Stock
The Edge to taste



  • Heat oil in medium pot and saute onion, garlic and basil until onions soften, about two minutes. Add Chorizo and render for another two minutes.

  • Add Chipotle powder, cumin, Sazon and oregano

  • Stir in Banana Peppers and Cilantro, and mix

  • Immediately add beans, and bring everything together

  • Use chicken stock to thin out beans as needed – adding a tablespoon at a time until desired consistency is achieved

  • Finish with The Edge, or a light dusting of salt and pepper
